Protein Packed Stevia and Cocoa Brownies

Need a healthy, spring time desert recipe for those warm evenings? Ever thought of using Stevia instead of Sugar to bake? The Protein Packed Stevia and Cocoa Brownies will do the trick! Try this guilt-free recipe and add Stevia to your cooking repertoire.

Ingredients:
1 cup Stevia
1 cup unbleached flour
3/4 cup cocoa powder, sifted
1/3 cup Whey Protein Powder, vanilla or plain
2 tbsp semi-sweet mini morsels
1 tsp baking powder
1/2 tsp baking soda
1/3 cup chopped walnuts
2 egg whites
2 cups of baby food prunes with apple puree
3/4 cup light vanilla yogurt
2 tbsp fat free milk
nonstick cooking spray
1 tsp vanilla extract

Directions:
1. Preheat oven to 350 F

2. In a large bowl mix Stevia, flour, cocoa, protein powder, first tbsp mini morsels, baking powder, baking soda and chopped walnuts.

3. In another bowl mix egg whites, prune with apple puree, vanilla yogurt, fat free milk and vanilla extract.

4. Slowly add dry mixture into wet mixture and blend thoroughly using a spatula.

5. Spray an 8 by 8 inch pan with nonstick cooking spray and pour mixture into pan.

6. Top mixture evenly with last tbsp of mini morsels. Bake in oven at 350F for 30 minutes. Cool and serve.
