Cranberry Orange Loaf

Ingredients
  • 3large organic, free-range eggs
  • 2tbsp melted and cooled coconut oil
  • 1/2cup raw honey
  • 1tsp vanilla
  • 3/4cup almond flour
  • 1/4cup coconut flour
  • 1/2tbsp baking powder
  • 1/2tsp baking soda
  • 1/2tsp sea salt
  • 1cup of whole, fresh cranberries
  • 1large orange, zested and juiced

Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Line an 8×4 or 9×5-inch loaf tin with parchment paper and grease lightly with coconut oil. Whisk eggs, honey, vanilla, orange zest and juice until light and fluffy, about 5 minutes. Slowly pour in the melted and cooled coconut oil.
  2. Sift together the almond flour, coconut flour, baking powder, baking soda and salt. Add the cranberries to the flour mixture and stir. Add the wet ingredients and fold gently to combine. Let the batter sit for 5 minutes. Pour the batter into the prepared loaf pan and smooth the top.
  3. Bake until a tester inserted in the center comes out clean, about 35–40 minutes. Allow to cool completely before removing from the baking pan.

  • 3medium bananas, peeled and mashed
  • 1/4cup coconut oil, melted
  • 1/4cup honey
  • 1tsp pure vanilla extract
  • 2cups almond flour
  • 1/2tsp baking powder
  • 1/2tsp baking soda
  • 1tsp cinnamon
  • 1/2tsp nutmeg
  • 1/2tsp sea salt
  • 1cup (70 percent cocoa) chocolate chips

  1. Preheat oven to 350 degrees Fahrenheit. Line an 8×4 or 9×5-inch loaf tin with parchment paper and grease lightly with coconut oil.
  2. Mix the eggs and lemon juice together in a bowl. Add the bananas, coconut oil, honey, and vanilla extract and stir until blended.
  3. Sift the flour, cinnamon, baking powder, nutmeg and salt together in a large bowl; stir into the wet ingredients until well blended. Add the chocolate chips and blend well. Pour the batter into the prepared loaf pan.
  4. Bake until a tester inserted in the center comes out clean, about 60 minutes. Allow to cool completely before removing from the baking pan.

Ingredients
  • 4 organic, free-range eggs
  • 2/3cup pure maple syrup
  • 1/4cup almond milk
  • 1tsp vanilla
  • 1/3cup coconut oil, melted and cooled
  • 1/2cup almond flour
  • 1/2cup coconut flour
  • 1tsp baking soda
  • 1tsp baking powder
  • 1tsp cinnamon
  • 1tbsp fresh grated ginger
  • 1tsp ground ginger
  • 1/2tsp nutmeg
  • 1/2tsp allspice
  • 3ounces dark chocolate, chopped
  • 1tbsp coconut oil

Instructions
  1. Preheat oven to 350 degrees Fahrenheit. Line an 8×4 or 9×5-inch loaf tin with parchment paper and grease lightly with coconut oil. Whisk together the maple syrup, eggs, almond milk, fresh ginger, vanilla and coconut oil.
  2. In a separate large bowl, sift the almond flour, coconut flour, spices, baking powder and baking soda. Add the dry ingredients to the wet mixture. Stir until thoroughly combined.
  3. Pour the mixture into the loaf tin. Bake for 30–40 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Allow to cool before glazing.
  4. Combine chocolate and coconut oil in a microwave-safe bowl. Heat for 30-second increments until the chocolate is melted slightly. Remove from the microwave and stir until the chocolate is incorporated into the oil.
  5. Remove the loaf from the tin and drizzle with chocolate.
